Yummy Chicken

Grocery shopping is something I enjoy doing, it's just the meal planning and list making that I find less than fun. Thankfully, I buy groceries every two weeks so it's not that bad. Recently I looked up our local grocery store's website and found thousands of recipes. So far I have tried about a dozen and for the most part they have been delicious. One recipe I ventured out and made was called Chicken Sliders. The recipe calls for ground chicken. Hmmm. I had never purchased ground chicken before and I didn't even know where in the meat section it was. I was skeptical about how these little chicken burgers were going to turn out and even more hesitant to tell Adam what they were made out of. (I didn't think for a second that they would pass for a real burger, but I just wasn't sure what he might think). They were super easy to make and I grilled them up in the house on our griddle. I made "homemade" rolls(from Rhodes frozen dinner rolls)* and with a bit of bar-b-que sauce or spicy mustard and a side of beans-these were surprisingly delicious. Even Adam liked them for being non-beef burgers.
*The Rhodes dinner rolls I purchased just weren't right for these. They are too small for a hamburger bun but they need a thicker roll than a yeast roll.

Chicken Sliders


Here is the recipe:
Ready in 30 minutes or less
Makes approx 8 sandwiches (I think I made ten patties)

2 lbs. ground chicken
3/4 cup chopped onion
2 Tbsp. fajita seasoning
1 egg, slightly beaten
4 slices of jalapeno (or any you like) quartered
8 dinner rolls or hoagie buns cut in half

1. Combo ground chicken, onion, seasoning and egg in a large bowl. Mix to blend, but do not overmix.

2. Form patties. Grill for five minutes on each side (I used our griddle). Place cheese on patty and set aside. Place in warm oven or microwave to keep warm.

3. Slice rolls open and serve with favorite condiments.
