Good Sandwiches {Recipe}

Funny name for a recipe, but when we want to pass a sandwich off for a main course this is what we call them.  We typically have bread and packaged lunchmeat, but not when have these!!! This is a super easy recipe that each person in your family can make according to his/her tastes. I am including a BONUS recipe at the bottom of the post.

I am going to list the basics we use and then adapt to your likes and number of people in your family.

Bread-French loaf, hoagie buns, Hawaiian bread/rolls, sandwich rounds, wraps, whole wheat bread, etc.  Or just your regular bread. 
I usually look in the bakery section of our grocery store.

Meat-Deli fresh cut meats.  Pepperoni, Bacon, pulled chicken or pork, roast beef, etc.
Our family likes, ham, turkey, pastrami, pepperoni, and bacon.

Cheese-Deli cut or already sliced in the lunchmeat/cheese section of the grocery store.
I buy the pre-sliced cheese that is hanging up by the lunchmeat.

Fixin's-The options are endless.
Some of our faves:
Lettuce, tomato, onion, jalapeno, pickles, avocado, cucumbers, green chili (fresh or canned)etc.

Dressing/Seasonings-Whatever you want, again the options are endless.

As I type this I am realizing how much like a certain sandwich shop this sounds like.

 I have to share this quick sandwich recipe (You could also make this with whatever meat and cheese you pick and add all condiments one it is out of the oven). My adaptations are in ( )This is from HEB magazine:
Buffalo Chicken Sub Sandwich:

1 HEB rotisserie chicken-shredded  (could be leftover).
1/3 cup buffalo wing sauce of your choice
2 French loaves sliced lengthwise (I make one for Adam and I with the buffalo sauce and one for the kids without) (If you need to make more than that just adjust all ingredients)
1/2 cup mayo
1/2 cup chopped green onions
1 jar roasted red peppers, drained and thinly sliced (we also like fresh jalapeno  and green chili)
1 cup sliced cheese of choice
12 slices pre-cooked bacon

1.Heat oven to 500 degrees.  Line two (or more) baking sheets with foil ands spray with non-stick spray. Set aside.

2. Shred chicken and combo with buffalo sauce (or not), coat well and set aside.

3. Spread cut side of bread with mayo and arrange chicken (or other meat) on the cut bread that is the bottom.  Sprinkle green onions on chicken, On the cut bread that is the top arrange red pepper slices, cheese and bacon.  Place all in oven and watch like a hawk as these babies toast up in about 5 minutes.  Once out and able, place both halves together  and cut.  I use a long serrated knife.  We eat these with canned or fresh fruit and carrots or with chips and beans.
